Tomato Greek Salad

Ingredients:

  • 1 pound tomatoes, cubed
  • 1 , sliced
  • ½ cup black olives
  • ¼ cup sun-dried tomatoes, chopped
  • 1 red onion, sliced
  • ¼ cup parsley, chopped
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons extra virgin oil

Tomato Greek Salad Directions:

  1. Combine the tomatoes, cucumber, black olives, sun-dried tomatoes, onion and parsley in a bowl.
  2. Add salt and pepper to taste then stir in the vinegar and .
  3. Mix well and serve the salad fresh.
